Professor Robert Lustig - Metabolic Health & Real Food

Robert H. Lustig is an American pediatric endocrinologist and professor emeritus of pediatrics in the division of endocrinology at the University of California, San Francisco (UCSF).
He specializes in neuroendocrinology and childhood obesity and is the director of UCSF's WATCH program (Weight Assessment for Teen and Child Health).
He is also the president and co-founder of the non-profit Institute for Responsible Nutrition.Lustig grew up in Brooklyn, New York, earned his bachelor's degree from MIT in 1976, and completed his MD at Cornell University Medical College in 1980.
He became a pediatrician in 1983, a subspecialist in Pediatric Endocrinology in 1984, and later pursued post-doctoral research in neuroendocrinology.
He has authored numerous peer-reviewed articles and reviews and has held chair positions on several boards focused on obesity.
Lustig gained widespread recognition in 2009 for his groundbreaking lecture, “Sugar: The Bitter Truth,” where he explained the toxic effects of fructose and its role in causing NASH (non-alcoholic steatohepatitis).
He is a passionate advocate for real food and reducing the consumption of refined sugars and ultra-processed foods.
He is the author of several books, including Fat Chance, The Real Truth About Sugar, The Hacking of the American Mind, and most recently, Metabolical. Known for his captivating lectures, Lustig has a unique ability to engage audiences with his brilliant insights and thought-provoking ideas.We had the opportunity to interview him at the IMMH 2024 conference this past October, where we discussed the concept of food—what it is, its purpose, and why we should avoid sugars and ultra-processed foods.
